Ristorante Antine
Set Among the Rolling Hills of Barbaresco,
Ristorante Antine Glows
Published on 5/30/2018
It was a night to remember. Cruising along the rolling hills of Piemonte, along the immaculate vineyards of the world UNESCO heritage community of Barbaresco, and past the Churches that have withstood the passage of time in stoic silence,
we arrived at Ristorante Antine.
The evening begins with a delightful glass of Maurice Grumier Extra Brut Blanc de Noirs Champagne to prepare our palettes for the magnificent eight course meal and the 21 bottles of the 2015 vintage of Barbaresco that awaited our tasting.
The Welcome From The Kitchen arrives and consists of eight tiny teasers, each containing a powerfully unique oral sensation.
Next, the scallops and sea urchins swayed amongst the beauty of iridescent corals of micro greens and purples as staghorn herbs communed with glowing peas.
Perfectly pinked veal sheltered alongside the ahi sauce beside drizzles of virgins and vinegar shaded beneath leaves of green.
Followed by the Fassona Cheek melting amongst the Barbaresco reduction.
And The Tiramisu, like none ever before experienced, sculpted like a direct carving from a relationship of love between Artist and Subject.
Then the dining concludes …almost… with a feast of pastries, and then the formaggi.
Finally a glimpse of things to come as our minds project the deepening tastes and aromas of the 21 youthful 2015 Barbarescos we have sampled as they age as brilliantly as the 2006 Montersino Barbaresco we now savor … making this truly a night to remember!
