A Picturesque Evening in the Provence of Cuneo …

On this gorgeous Spring evening, we gather on the terrazza of Donna Selvatica, a Summit of Sovereigns. As the day closing in spectacular fashion, beyond the Tower of Barbaresco and distant Guarene Castillo, with the sun silhouetting the hills to the west, and yielding hint to the magnificence of the Alps just a few kilometers beyond. But long silenced were the voices of the Generals Scipio, Aemilius Paullus, Scipio Aemilianus, Gaius Marius, Lucius Sulla, Pompey, and Julius Caesar, whose victories laid the foundation upon which the great nation of Italy was born. Nor was there any talk this night of the Spring storm that wreaked havoc, the invasion of the Celts, nor the Crusades of Pope Urban II. Tonight, there is but one topic of conversation, and that topic is … wine!
The creations of vineyards totaling a score plus one prove, once again, God’s love for us as we delight in the products of Treiso, Neive, Alba and Barbaresco. The splendor of the creative genius of the Winemaker we enthusiastically explore!
And to no one’s surprise, Donna further stimulates our palettes with an inspirational meal. She teases us with a scrumptious ahi tartare perched upon a plateau of whirled peas, and bread served with something rarely seen here … butter! But no ordinary butter is this, as it is made with Fiandiano cream from the Centallo Mountains which provides its rich taste, creamy texture, and warm, welcoming color.
And then we are served a red pepper and eggplant terrine topped with marinated anchovies.
A delicately crafted presentation of breaded wrapped egg appears next atop snow peas and bacon with Valle d’Aosta’s Fontina DOP Fondue.
Ravioli stuffed with pork, chicken, beef, and vegetables topped with rosemary and fresh parmesan follows.
Our server, Matilde, who is as delightful and beautiful as she is knowledgeable, then surrenders a plate of Brasato al Barbaresco … braised Fassone veal with roasted polenta and Fava bean puree.
And for dessert … White chocolate and strawberry gelato tops fresh strawberries! Providing a perfect conclusion to an incredible Summit of Sovereigns!!!
